Posted by: Stephanie When we went to the sitio yesterday, Daniel found the remains of a notebook in Granny’s house that contained some recipes. They weren’t in Granny’s handwriting, but they’re recipes of common Brazilian food.
BOLO DE MANDIOCA
- 4 ovos
- 3 xicaras de mandioca ralada
- 3 xicaras de farinha de trigo
- 3 colheres de margarina
- 3 xicaras de acucar
- 1 copo de leite
- 1 xicara de coco ralado
- 1 colher de sopa de fermento Royal
- Misture a mandioca ralada bem miudinha com ovo, farinha, margarina, acucar, leite, coco e fermento.
- Depois de misturar bem, colocar a massa em forma untada com margarina e farinha.
- Levar ao forno para assar ate dourar.
BOLO DE LARANJA
- 4 ovos
- 2 xicaras de acucar
- 3 xicaras de farinha de trigo
- 1 copo de suco de laranja baiana
- 1 colher de sopa de fermento Royal
- Bate o acucar com as gemas.
- Misture para adicionar caldo de laranja e fermento.
- Bate as claras em neve e misture com a massa.
- Levar ao forno a massa numa forma untada para assar.
ROCOMBOLE
- 4 ovos
- 4 colheres de sopa de maizena
- 3 colheres de sopa de farinha de trigo
- Bata as claras em never. Juntar as gemas e continuar batendo para que fique em ponto bem firme.
- Junte o acucar e continuar batendo. Colocar farinha e apenas misturar.
- Forrar uma forma com papel aluminio previamente untado com mantega e salpicado com farinha de trigo.
- Levar assar em forno quente. Depois assado virar em guardanapo que esteja coberto com canella em po misturado com um pouco de acucar.
- Passar o creme (que pode goiabada our marmalada com um pouco de leite). Emruedar e cortar em fatias.

- 6oz flour
- 3oz bread crumbs
- 3oz suet
- 3oz sugar
- 6oz marmalade
- 2 tsps baking powder
- pinch of salt
- 2-3 eggs (3 if small)
- raisins
- sultanas
- For serving: marmalade/sweet-sauce/cream
A little milk to make it a soft mixture but not runny. Mix flour, baking powder, suet, salt, and sugar well together. Beat the eggs and add the marmalade. Then stir into other ingredients. Beat lightly. If too stiff, add a little milk. Line a basin with raisins and sultanas, pour in mixture, cover with paper and steam for 2.5 hours. Serve with marmalade or sweet-sauce or cream.
